Summer is officially here! BBQs and pool parties are happening, freshly cut grass is around every corner, lightning bugs come out, the days are longer, and life is good!
One thing that I associate with summer is a lot of salads! They are so easy to make, they serve a lot of people, and there are literally thousands of different kinds you can make. One of my all time favorite summer salads is this easy cucumber tomato salad. You can dress it up or down, add protein, cheese, more vegetables, the possibilities are endless!
This is my go to recipe for lunch every day. I have been obsessed with this ginger dressing as well. It is so refreshing and gives it just a bit more flavor. You will wow your guests at your next picnic or BBQ get together with this make ahead cucumber tomato salad.

Easy Cucumber Tomato Salad Recipe
INGREDIENTS

1 carton 10oz petite medley snacking tomatoes
1 tablespoon grated fresh ginger
DIRECTIONS
- In a large bowl, combine sliced tomatoes, English Cucumber, chopped green onion and arugula. Toss gently.
- In another small bowl, combine veggie oil, red wine vinegar, grated ginger, sugar, salt and pepper until mixed.
- Pour over tomato-cucumber mixture. Sprinkle with feta cheese crumbles. Enjoy! (You can also chill for 1-4 hours. Stir gently before serving.)
All ingredients are linked from Kroger, which is our go to grocery store. I choose organic options when available but regular produce is fine as well!
